Tarkastelen ruokaj\u00e4rjestelm\u00e4n kest\u00e4vyysmurroksen \nn\u00e4k\u00f6kulmasta sit\u00e4, miten teolliset elintarvikkeet n\u00e4kyv\u00e4t ruokapalvelujen\nkouluruokaty\u00f6ss\u00e4, millaisia normatiivisia k\u00e4sityksi\u00e4 teollisiin elintarvikkeisiin \nliitet\u00e4\u00e4n ja miten ruokapalvelut toimivat yhdess\u00e4 teollisuuden kanssa.\nAineisto koostuu yhdeks\u00e4st\u00e4 teemahaastattelusta, joihin osallistui yhteens\u00e4 10 \ninformanttia. Informantit ovat ymp\u00e4ri Suomen sijaitsevien julkisten ruokapalvelujen \np\u00e4\u00e4t\u00e4nt\u00e4- ja suunnittelutason toimihenkil\u00f6it\u00e4. Analyysimenetelm\u00e4n\u00e4 k\u00e4yt\u00e4n \naineistol\u00e4ht\u00f6ist\u00e4 sis\u00e4ll\u00f6nanalyysia. \nAnalyysiss\u00e4 tuloksiin muodostui kolme osiota. Ensimm\u00e4isess\u00e4 osiossa kuvaan \nteollisten elintarvikkeiden hy\u00f6tyj\u00e4 ja haittoja ruokapalvelujen n\u00e4k\u00f6kulmasta sek\u00e4 sit\u00e4, \nmiten teollisia kasviproteiineja k\u00e4ytet\u00e4\u00e4n kasvisruoan valmistuksessa. Tulosten \ntoisessa osiossa k\u00e4sittelen ruokapalvelujen normatiivisia k\u00e4sityksi\u00e4 liittyen teollisiin \nelintarvikkeisiin. Normatiivisesti hyv\u00e4 kouluruoka jakaantui ihanteelliseen ja \nhyv\u00e4ksytt\u00e4v\u00e4\u00e4n kouluruokaan. Kolmannessa tulososiossa tarkastelen \nruokapalvelujen ja elintarviketeollisuuden yhteisty\u00f6t\u00e4 ja tulevaisuutta.\nYleisimmin ruokapalveluissa k\u00e4yt\u00f6ss\u00e4 olevat teolliset elintarvikkeet ovat \nkappaletuotteet, kastikeainekset ja kasviproteiinit. Teollisten elintarvikkeiden k\u00e4ytt\u00f6 \non resurssiniukkuudesta johtuen v\u00e4ltt\u00e4m\u00e4t\u00f6nt\u00e4. Suurin osa haastateltavista ei pid\u00e4 \nteollisia elintarvikkeita ihanteellisena, vaan valmistaisi kouluruoan mieluummin itse \nk\u00e4ytt\u00e4en vain kevyesti prosessoituja elintarvikkeita. Teollisten elintarvikkeiden \nhyv\u00e4ksytt\u00e4vyys on kuitenkin lis\u00e4\u00e4ntym\u00e4ss\u00e4, ja jatkossa ruokapalvelujen ja \nteollisuuden yhteisty\u00f6n uskotaan tiivistyv\u00e4n. Ruokapalvelujen tulevaisuus koetaan \nkuitenkin pitk\u00e4ll\u00e4 aikav\u00e4lill\u00e4 ep\u00e4varmaksi. Aineistosta muodostui kolme \ntulevaisuusskenaariota.
