Student and workplace canteens have a\ngood opportunity to promote actions towards a more climate-friendly food sector\nsince these canteens have a big role in the everyday eating of Finnish people. Better knowledge of the climate impact of student and workplace canteens is essential to identify the best practices for the mitigation of greenhouse gas emissions. In this thesis I defined the carbon footprint of Semma university canteens. Carbon footprint describes the climate impact of a certain unit such as product, company, or person. Based on these results I calculated three different emission reduction scenarios. The carbon footprint of Semma was 2281 tonnes of carbon dioxide equivalent. The biggest source of emissions was food procurements that formed 85 % of the carbon footprint. The second biggest source was energy with an 8 % share of the carbon footprint. The rest of the emissions were caused by procurements, services, business travels, and commuting, waste, and water, in that order. If all food is plant-based, no food waste is generated and energy and traffic are emission-free, the emission reduction will be 65 % of the current carbon footprint.
